My mate Helen works as a taste tester for a chocolate company. She also survived eight hours of chocolate tasting and judging with me for the ‘Rush’ Australian Chocolate Championships, so she knows her way around a square or two. company.
As such, she has access to all kinds of wonderful chocolate products, but such is her addiction that she also makes Rocky Road at home and has generously shared her recipe with us:
Rustle up some good quality ingredients……..

Soft snakes or jelly babies
Pascall marshmallows
Real turkish delight from the kebab shop
Roasted almonds or hazelnuts
Medium dark chocolate 30-50% cocoa solids
Moist coconut flakes
…….and chop them all up.

Melt the chocolate (nuke in the microwave on high for a minute, take out and stir and nuke and stir it again until it’s melted to a runny texture) and then mix all the chopped ingredients in.
Press into a dish covered with baking paper.
Bung in the fridge to set and then slice it up and EAT!
Note that Helen hasn’t provided any quantities, so I’d suggest you start with 200 -200 grams of chocolate and see how much ‘dry stuff’ you can stick together with it! Any better suggestions can be listed here



These sound nice. I’ll pass the recipe to my grand daughter, she’s into baking cookies right now.
I looked at a fairly highly rated rocky road recipe from an online recipe site and they had these quantities:
500g chocolate
200g marshmallows
1/4 cup coconut
1/2 cup nuts
110g turkish delight
Haven’t tried it myself so I’m just taking everyone’s word for it.

Well quantities… I usually just throw it all in…a packet of this and that,and keep adding chocolate to bind it !
That’s MY kind of cooking, Helen, especially just adding MORE chocolate until it all sticks together.
This looks good, all ingredients that I like! Might have to try some for around Christmas, there’s nothing quite like home made rocky road, mmmmmmmm…
