CatJB’s Smartie Cookies
GoneChocco reader and blogger CatJB has a thing for smarties. We won’t hold that against her because she makes a mean batch of cupcakes and these adorable smartie cookies and has kindly shared the recipe with us.

Ingredients
125 gm soft butter
1 cup brown sugar
1/2 teaspoon vanilla extract
1 egg
1 cup plain flour, sifted (I never do, too lazy)
1 cup desiccated coconut
1 tablespoon cocoa, sifted

Method
*Preheat oven to 180c and lightly grease 2 baking sheets.
*Using an electric mixer, cream butter, sugar, vanilla together until light and fluffy.
*Add egg, beating well.
*Mix in flour, cocoa and coconut.
* Roll tablespoon sized amounts into balls and flatten slightly. These will spread, so give them room.
*Press as many smarties as you want gently on top of the flattened balls.
*Bake 10-15 minutes, cool slightly before transferring to wire rack to cool.
CatJB adds that next time she makes them she’ll add more cocoa because her four year old informed her they’re not brown enough ie, not chocolatey enough.
